Delicious chicken and rice dish that is popular in Kuwait and some other Arab countries.

Chicken Majboos | مجبوس دجاج | Traditional Kuwaiti Cuisine
Ingredients
Whole Garam Masala
3 Bay leaves
2 Cinnamon sticks
6 Cardamom
5 Cloves
1 Fresh lemon OR dried black lemon
1-2 Star anise
Marinade for Chicken
1 tsp salt
1 Tbs lemon juice
For Rice
600 gr Basmati rice
1 kg Chicken (no skin, cut into 4 pieces)
3 cups Water
2 cups Chicken stock
3 Onions, thin sliced
3 Tomatoes, blend to make tomato puree
1 Tbs Ginger Garlic paste
1 tsp Chili powder
½ tsp Turmeric powder
½ tsp Coriander powder
½ tsp Cumin powder
3 Tbs Oil/ghee
Salt to taste
Cooking Instructions
Marinate the chicken with salt and lemon. Leave it at room temperature for 30 minutes.
Soak the basmati rice with water for 30 minutes. Then strain it to remove the water.
Heat the ghee and add the whole garam masala.
Add the onions and ginger garlic paste. Keep stirring until the onions turn golden brown.
Add the tomato puree, salt, turmeric, coriander, cumin, and chili powder. Stir them well.
Add the chicken and stir it to ensure the chicken is coated with the spice.
Pour the water and chicken stock. Cover the pot and simmer until the chicken is tender.
Once the chicken is tender, take out from the pot. Then sear both sides until golden brown.
Add the rice to the pot. Cover the pot and simmer until the rice is cooked.
Note: check the rice and stir it to ensure it does not get burnt while simmering it.
Once the rice is cooked, transfer it to a service plate. Top with the chicken and garnish with fresh cilantro.

Bahan-bahan:
Garam Masala Utuh
3 lembar daun salam
2 batang kayu manis
6 Kapulaga
5 Cengkeh
1 lemon segar ATAU lemon hitam kering
1-2 Bintang adas manis
Bumbu untuk Ayam
1 sdt garam
1 sdm jus lemon
Untuk Beras
600 gr beras basmati
1 kg Ayam (tanpa kulit, potong 4 bagian)
3 gelas air
2 cangkir kaldu ayam
3 Bawang bombay, iris tipis
3 Tomat, haluskan untuk membuat pure tomat
1 sdm pasta campuran jahe dan bawang putih
1 sdt bubuk cabai
½ sdt bubuk kunyit
½ sdt ketumbar bubuk
½ sdt bubuk jintan
3 sdm minyak / ghee
Garam secukupnya
Cara Memasak
Lumuri ayam dengan garam dan lemon. Biarkan pada suhu kamar selama 30 menit.
Rendam nasi basmati dengan air selama 30 menit. Kemudian sarring untuk membuang airnya.
Panaskan ghee dan tambahkan seluruh garam masala.
Tambahkan bawang bombay dan pasta jahe bawang putih.
Aduk terus sampai bawang bombay menjadi cokelat keemasan.
Tambahkan bubur tomat, garam, kunyit, ketumbar, jinten, dan bubuk cabai. Aduk rata.
Tambahkan ayam dan aduk untuk memastikan ayam terlapisi bumbu.
Tuangi air dan kaldu ayam. Tutup panci dan biarkan mendidih sampai ayam empuk.
Setelah ayam empuk, keluarkan dari panci. Kemudian bakar kedua sisinya hingga berwarna cokelat keemasan.
Tambahkan nasi ke dalam panci. Tutup panci dan biarkan mendidih sampai nasi matang.
Catatan: periksa nasi dan aduk untuk memastikan nasi tidak gosong saat mendidih.
Setelah nasi matang, pindahkan ke piring servis. Taburi dengan ayam dan hiasi dengan daun ketumbar segar.
