When you have an excess amount of fresh basil, you may be asking yourself what to do with it. There’s a lot of great recipes to use it in besides pesto. I’m sharing 4 recipes that are perfect for using up this favorite summer herb.
Simple Basil Vinaigrette – an easy dressing that is herby and vibrant green.
Stuffed Mushrooms – Mushroom caps stuffed with cheese and basil that get baked in the oven until they’re melty and gooey.
Rao’s Mariana Sauce Copycat - The jarred stuff can cost $8-$10 a jar. You can make your own at home for around $2-$2.50 and it’s a larger than the jars Rao’s makes.
Dump and Bake Basil Chicken - a flavorful marinade gets mixed up and poured over boneless, skinless chicken breasts and baked for a juicy flavorful chicken dinner.

Rao’s Marinara Sauce Copy Cat
1 28 Oz Jar Whole Peeled Tomatoes
1 Medium Onion, Chopped
¼ Olive Oil
2-3 Cloves Of Garlic
1 Large Sprig Of Basil (Or 1 Tsp Dried)
1 tsp. Dried Oregano
1 tsp Salt
½ tsp Black Pepper
Instructions
1. In a medium sauce pan heat the olive oil over medium-low heat.
2. Once hot, add the onion and sauté for 8-10 minutes until soft.
3. Add garlic and sauté another 30 seconds until fragrant.
4. Add tomatoes and break up some with a spoon.
5. Add basil, oregano, salt, and pepper.
6. Cover and simmer for 45-60 minutes.
7. After simmering, break down large tomato pieces into a sauce with a potato masher to desired consistency. You could also blend with a stick blender or conventional blender into a sauce.
