Call it 𝐒𝐡𝐫𝐢𝐦𝐩 𝐂𝐫𝐞𝐨𝐥𝐞, Camarones Enchiladas, or Enchilado de Camarones. This fantastic dish of Spanish and Portuguese origin is super easy to make delicates that can be ready in as little as fifteen minutes. Sure, Emeril, Paula Deen, and Justin Wilson may have excellent shrimp creole recipes. However, my shrimp creole recipe is slightly different and 100% influenced by my Cuban heritage. This is the way you find shrimp creole served in many small mom-and-pop restaurants throughout Miami, where it is called Camarones Enchilados.
The secret to an excellent 𝐂𝐚𝐦𝐚𝐫𝐨𝐧𝐞𝐬 𝐄𝐧𝐜𝐡𝐢𝐥𝐚𝐝𝐨𝐬 is the sauce. My shrimp creole sauce is based on a very basic Spanish sofrito, sometimes referred to as a tomato base fricase. Not to be confused with fricassee or fricassée, a stew made with pieces of meat browned in butter served in a sauce flavored with chicken or beef stock. My shrimp creole sauce consists of bell peppers, onion, garlic, chopped tomatoes, tomato sauce, salt, black pepper, and cumin. One unique component or procedure is that I don't use white or cooking wine for deglazing, and I prefer beer instead. Once you have mastered my shrimp creole sauce opens the door to many other recipes since all you have to do is replace the shrimp with crawfish, lobster, fish, and even chicken. Another variation to this shrimp creole recipe is to double up the garlic, at which time it becomes Camarones or Gambas al Ajillo! A very similar dish with a little less tomato sauce and twice as much garlic as a 𝐬𝐡𝐫𝐢𝐦𝐩 𝐜𝐫𝐞𝐨𝐥𝐞 𝐫𝐞𝐜𝐢𝐩𝐞.

The Cuban Shrimp Creole or "enchilado de camarones" is a flavorful, classic Cuban dish that some claim originated in Haiti. However, suppose you know anything about cooking or the original history, something that is becoming hard to come by since everything from Wikipedia to history books is being revised to fit the misinformation and political agenda of the LEFT. In that case, you may know that whether you call it 𝐞𝐧𝐜𝐡𝐢𝐥𝐚𝐝𝐨 𝐝𝐞 𝐜𝐚𝐦𝐚𝐫𝐨𝐧𝐞𝐬 or 𝐬𝐡𝐫𝐢𝐦𝐩 𝐜𝐫𝐞𝐨𝐥𝐞, this is a dish based on the Spanish/Portuguese recipe known as Gambas al Ajillo. Not only that but a recipe that dates hundreds of years before the colonization of the Americans! This dish and recipe with a local variation, of course, is found not only in Haiti but in every country colonized by Spain, for example, the Philippines, Santo Domingo, and other places.
Although there is no shortage of YouTube recipes for shrimp creole, there are few enchilado de camarones in English. As with many if not all of my recipes, this may not follow the way many learned to cook at home since I learned to cook not in school but instead on the job at restaurants throughout the South Florida area. As I have advanced my cooking techniques, I have also learned that some of that early lessons were perhaps not the best way to go about it. But as they say, sometimes old habits are hard to break.
𝐁𝐞𝐬𝐭 𝐂𝐮𝐛𝐚𝐧 𝐒𝐡𝐫𝐢𝐦𝐩 𝐂𝐫𝐞𝐨𝐥𝐞 (𝐄𝐧𝐜𝐡𝐢𝐥𝐚𝐝𝐨 𝐝𝐞 𝐂𝐚𝐦𝐚𝐫𝐨𝐧𝐞𝐬)
This super easy shrimp creole recipe takes about 15-20 minutes from start to finish. Because of that, you must have everything ready to go, since the time-lapse between steps is only a couple of minutes. We'll start by sautéing our peppers and onion in a deep saucepan for 3-4 minutes. Then add the dry spices, cook for a minute, add the garlic, cook for a minute, followed by chopped tomatoes and the tomato sauce. It is critical to allow 2-3 minutes between adding each condiment so that the temperature in the saucepan does not drop too much. After adding the beer, and the soy sauce, we'll let our sauce simmer over medium heat and get going with pre-cook the shrimp. Bring a large skillet to temp with some olive oil and a tablespoon of butter to temp over high heat. Once up to temp, add the shrimp, salt, pepper, and cook for about 2-minutes on each side. We are not trying to cook the shrimp by just giving it color and taste. Then add the ship to the sauce, cook for another 2-3 minutes, take it off the heat and let it rest for 3-4 minutes before serving. So, whether you call it 𝐞𝐧𝐜𝐡𝐢𝐥𝐚𝐝𝐨 𝐝𝐞 𝐜𝐚𝐦𝐚𝐫𝐨𝐧𝐞𝐬 or 𝐬𝐡𝐫𝐢𝐦𝐩 𝐜𝐫𝐞𝐨𝐥𝐞 this is a super easy shrimp recipe that can be table ready in 15-20 minutes and a perfect healthy meal for working professionals that just want to come home.
