A classic tapioca pudding with a durian twist. The Durian Tapioca Pudding. Enjoy this light and refreshing dessert at your own discretion. Durian isn't for everyone but the bravest souls.
Recipe serves 4 - 5 portions
Ingredients:
- 800 grams of durian
- 400 ml coconut milk
- 1 teaspoon salt
- 1/2 cup sugar
- 500 ml water
- 1/2 tapioca pearls (soaked for at least 15 minutes prior to cooking)
Directions:
1. Remove the pits and husks from the durian. Mash the durian.
2. In a medium sized pot on medium heat, pour in the water, coconut milk, sugar and salt. Stir until sugar is dissolved and all of the ingredients are incorporated.
3. Add in the soaked tapioca pearls into the pot and stir constantly until the tapioca pearls are soft and the mixture thickens.
4. Add in 3/4 of the durian or 600 grams (keeping the remaining 200 grams for topping purposes) to the mixture and stir until fully incorporated. Turn off the heat.
5. Let the pudding cool down at room temperature then transfer to the fridge to chill for 30 minutes.
6. To serve, in a small bowl/glass, pour in the pudding, top with the remaining durian and boiled tapioca (optional).
