Tomato Rice is a famous South Indian recipe. It is very delicious and an easy to prepare dish. Pureed tomatoes are sauteed with spices and then added to rice. This recipe works as a perfect one pot meal.
TOMATO RICE
Ingredient
5-6 medium tomatoes, finely chopped
2 cups rice, soaked
2 tablespoons oil
¾ cup cumin seeds
¼ cup bottle gourd (lauki), chopped
¼ cup potatoes, chopped
Salt to taste
1 green chilli, slit
1 tablespoon ghee
Method
1. Heat some oil in a non-stick cooker, add cumin seeds and sauté till it leaves aroma. Add bottle gourd and potatoes, stir and cook for 3-4 minutes.
2. Add tomatoes and salt, sauté for 5-6 minutes or until the tomatoes are done.
3. Add green chilli and soaked rice, stir well and mix. Add 3 ½ cups of water.
4. Add ghee and stir, cover the pressure cooker and cook for 2-3 whistles. Simmer for 5-7 minutes post the whistles.
5. Garnish with fresh coriander and serve with raita/pickle or papad.
