Cellar Club gives us a chance to experiment with recipes that might not otherwise get a shot because they seem too audacious. This is one of those beers. We took a few of the things we do well – fruit additions, IPAs, and wood-aged sour beer – and put them all together in one recipe. Then we added even more of each to the recipe until we had a beer loaded with mangos and citra hops, and blended with 20% gilda, our golden sour ale.
Let’s be honest: There’s a lot going on here. It’s nearly 12% fruit by volume with a ton of hops for tropical character, and a sour addition that leans grapefruit in aroma. But that’s one of the great parts of Cellar Club for us as brewers: pushing boundaries in ways that take us into some uncertain territory.
