This recipe gives BBQ chicken a whole new meaning with a Jim Beam 🍻 sauce that will kick it into HIGH 📈gear. Also, learn how to use your cast iron skillet on the grill for juicier, and more flavorful chicken. Enjoy!! 😋
*BBQ Chicken*
3 lbs of chicken thighs and drumsticks with skin left on
*Seasoning*
2 tbs of avocado oil
2 tbs of brown sugar
1 tbs of chili powder
2 tsp of onion powder
1 tsp of garlic powder
2 tsp of kosher salt
1 tsp of pepper
*Jim Beam BBQ Sauce*
1 cup of finely diced white onion
2/3 cup of ketchup
2 tbs of worcestershire sauce
2 tbs of apple cider vinegar
1/2 cup of water
2 tsp of dried mustard powder
2 tbs of your favorite bourbon (I used Jim Beam Black-Extra Aged Bourbon)
1 tsp of dried parsley flakes for garnishing
1. Prepare grill with charcoal briquettes in 1 half of grill grate and light using Sear Pro torch and fire starters.
2. Allow charcoal to burn for 10-15 mins until ashed over.
3. Add 12 inch cast iron skillet to indirect side and heat for 5-10 mins with lid closed at 450-500 F.
4. Mix chicken seasoning and combine completely.
5. Add chicken to plastic zip lock bag and add seasoning with avocado oil. Mix thoroughly until all chicken pieces are coated completely.
6. Add chicken skin side down to hot skillet and sear for 15 mins and then flip once.
7. Close lid and cook chicken for another 15-20 mins until internal temperature reaches 175-180 F.
8. Remove chicken from skillet and stir drippings.
9. Add onions and cook for 5 mins until softened.
10. Add remaining ingredients including Bourbon and continue to simmer until sauce thickens for 1-2 mins.
11. Add chicken back into skillet and pour over sauce onto each chicken piece.
12. Close lid and cook for an additional 1-2 mins.
13. Remove chicken onto plate with sauce and garnish with dried parsley.
