One of the most famous and best mangalorean chicken recipe is chicken ghee roast. While making this recipe make sure to use only 'Kashmiri Red Chilli's', Which gives an exotic colour to the recipe but not the spiciness.

Ingredients:

for Marination:

CHICKEN (with bones)- 500 gms
CURD / YOGURT - 4 tbsp
LEMON / LIME JUICE - 1 tbsp
TURMERIC POWDER - ½ tsp
SALT - ½ tsp

for making paste:

KASHMIRI RED CHILLI - 10 Number
CORIANDER SEEDS - 2 tbsp
CUMIN SEEDS - 1 tsp
FENNEL SEEDS - ½ tsp
BLACK PEPPER CORNS- ½ tsp
CLOVES - 4 Number
METHI SEEDS - ¼ tsp
TAMARIND - ½ Lime Sized
GARLIC CLOVES - 5 Number
WATER - 4 tbsp

For Chicken Ghee Roast
GHEE / CLARIFIED BUTTER - ¼ cup
MARINATED CHICKEN
SALT - ½ tsp
JAGGERY - 1 tsp
FRIED CURRY LEAVES - 1 tbsp
