This is my version of Mexican Street Corn (Elote) For Two. This method is fast and delicious!
Ingredients:
2 Ears of Corn (microwave on high for 6 minutes)
3-4 Tablespoons Butter (room temperature)
3-4 Tablespoons Mayonnaise
1-2 Tablespoons Fresh Lime Juice
Cotija Cheese (crumbled)
Spices of Choice:
Smoked Paprika
Chili Powder
Tajin
Cajun Seasoning
Valentina Mexican Hot Sauce
