Golbarir kosha mangsho is a delicious Bengali style mutton curry recipe from a popular Kolkata restaurant named Golbari. This unique mutton kosha is a dry mutton curry recipe which got hugely popular to all foodies! Today I am going to share how to make Golbari style mutton kosha recipe at home.
Golbarir mutton kosha is an unique flavoured soft & juicy meat with a dark black hue is slowly cooked in an iron vessel. This mutton preparation of Golbari is different from Bengalis traditional kosha mangsho recipes. Even it is different from other Kolkata restaurant-style mutton or chicken curries too. Due to its uniqueness, Golbari is close to many Bengali’s hearts. Though it is a restaurant-style recipe, however, easy to make at home even prepared with simple ingredients. Although it is a little time consuming but is worth trying!!
Ingredients you will need :
* Mutton- 1 kg (medium sized pieces with bone)
* Onion- 1 1/2 cups
* Cumin powder- 1 Tsp
* Curd- 1/2 cup
* 2 Tbsp raw papaya paste
* green chilies- 1-2
* Salt (to taste)
* Ginger paste- 1 1/2 tbsp
* Garlic paste- 1 Tbsp
* Sugar- 1 tsp
* Whole Garam masalas
* Ghee- 1 Tbsp
* Javetri- 1/2
* Star anise powder- 1/4 tsp
* Garam masala powder- 1 tsp
* Mustard oil- 1/3 cup (half a cup is enough..choose your mutton with some fat..adds to the flavor)
