Today's video was captured after having my laptop restarted more than twice to see if New Outlook reinstates.
I hadn't seen anyone showing or promoting this particular fix on YouTube. Many would simply try uninstalling the New Outlook app from the Start Menu/ "Apps And Features" or even PowerShell/CMD, only to find it reinstalled right away.
I just referred to the most viewed video titled "How to stop Mail app switching to new outlook problem in Windows 10/11" by "Elite FIX". That featured a block through the firewall and the classic uninstallation from the start menu. Although, according to the only 2 commentators, those viewers have also found themselves back with the new outlook crap.
The irony is that even the "Switch back to Mail" option hidden inside New Outlook's Settings - About section would bring you what you want for a ridiculously brief moment and give you the biggest "F U" sign by reopening Outlook.
To summarize, I intentionally or unintentionally made sure that the latest version of New Outlook IS INSTALLED on my laptop today, as usual. I was recently able to "hijack" the permission to fully control what's inside the "WindowsApps" folder by some security permissions workaround. A similar operation is included in this video:

but be cautious while trialing that.
You will need to set Windows Explorer to
-(IMPORTANT) VIEW HIDDEN FILES
-(OPTIONAL) FILE NAME EXTENSIONS,
since the "WindowsApps" folder is both hidden and off-limits for standard users. If you were able to retrieve the folder, Look for folders named like this:
"Microsoft.OutlookForWindows_x.xxxx.xxx.x_x64__8wekyb3d8bbwe"
Each folder contains the main executable file "olk.exe" (OLK). It's important to delete every instance of this executable file. You may also be able to move on with everything inside those folders removed like shown in this video.
Just in case, disable "App Updates" from Microsoft Store and if you want, manually check whether your apps are in need of updates from the "Downloads" section of the Microsoft Store.

If you want to REVERT this fix,
Remove the above-mentioned folders entirely from WindowsApps ("Microsoft.OutlookForWindows_x.xxxx.xxx.x_x64__8wekyb3d8bbwe")
And manually install the latest .msix bundle for Outlook (New) from uptodown.com

*I just found out that the "work/study" email addresses made for me by my campus are actually Microsoft Exchange accounts. So in case Mail And Calendar apps get killed, I can return to the legacy office Outlook and/or Mozilla Thunderbird. But no replacement for the legacy calendar and what's being displayed under the taskbar's clock menu... AAARGH!
