SPICED SCRAMBLE (Serves 1)
3 eggs
½ red pepper
50g cherry tomatoes
½ red onion
½ tsp. cumin seeds
1/3 tsp. nigella seeds
¼ tsp. chilli or chilli flakes
Sea salt + black pepper
Coconut oil / butter (to cook)
BAKED APPLES
2 apples
1 tsp. coconut oil
½ tsp. cinnamon
To serve:
Coconut yogurt
Walnuts/ pecans
CACAO PORRIDGE
½ cup / 45g oats (soak)
½ cup almond milk (add more if required)
½ tsp. cinnamon
½ tbsp. cacao
1 tbsp. protein powder of choice
Optional extras:
Hemp, pumpkin and flax seeds
Coconut yogurt
Blueberries
POTATO ROSTI
2 large potatoes
1 spring onion
Salt & pepper
1 tbsp. plain flour
2 tbsp. grated Parmigiano Reggiano
