**Recipe:**
1. **Cream Layer:**
- 300g cream cheese
- 150g sugar
- 300ml whipping cream
- 12g unflavored gelatin (hydrated)
Beat cream cheese and sugar until smooth. Add whipping cream and beat until stiff peaks form. Mix in the gelatin until combined.
2. **Biscuits:**
- 250g sponge finger biscuits
- Orange juice
Dip biscuits in orange juice and layer them in the bottom of a medium baking dish. Spread half of the cream mixture over the biscuits.
3. **Tangerine Layer:**
- 6 ripe tangerines
- 1 tsp baking soda
- 150g granulated sugar
- 200ml orange juice
- Cinnamon stick
- 100g unsalted butter
Peel tangerines and soak the peels in water with baking soda for 15 minutes, then boil in fresh water for 15 minutes. Drain and add to a pan with sugar, tangerine slices, and orange juice. Boil, then blend until smooth. Add cinnamon stick and butter, stirring until melted. Cook for 5 more minutes. Divide into two bowls and cool.
4. **Assemble:**
Spread half of the tangerine mixture over the cream layer, swirl with a stick. Add the remaining cream and tangerine mixture, swirl again. Chill for at least 3 hours.
