This is a cheese that originated in Monterey County, California in 1892, according to Home Cheese Making by Ricki Carroll. Cheese.com says it is a white, semi-hard cheese made from cow's milk and has a compact texture that can be creamy or firm. It has a buttery, mild taste. I aged it for 3 and 1/2 months.
