During our recent trip to Emilia Romagna, we revisited the lovely Ada, who made a delicious aubergine (eggplant) and ham lasagna for us this time. If you spot a crew in the video it's because Arte TV from Germany filmed Pasta Grannies at work and Ada agreed to be our star granny.

This recipe is for 5/6 people.
For the dough:
- 150g 00 flour
- 150g durum wheat flour
- 3 eggs
Knead it for 10 minutes and let it rest for 15 minutes.
For the filling:
- 3 large aubergines
- flour
- 200g ham
- corn oil for frying the aubergines
- 70g parmesan cheese
- butter
For the béchamel:
- 100g butter
- 100g flour
- 1 litre semi-skimmed milk
- pinch of nutmeg
