So what is a SCOBY hotel? it's just a vessel you use to store your extra SCOBY's.
So why would you want a SCOBY hotel?
a. Always on hand to give to a friend
b. Start a new brew
c. Replace old SCOBY or moldy one

How to start a SCOBY hotel:
Chose a clean glass jar
Place extra SCOBY’s in the jar
Fill with enough finished kombucha to cover the SCOBY’s
Not enough finished kombuch? Just start a new batch of kombucha, don’t drink it
Cover and store in cool area it won’t be disturbed
Maintenance
1. Every 2 months add a cup of tea with ¼ cup of sugar. To re-feed and keep everyone alive.
2. Remove SCOBY’s, have a fresh batch (or enough to cover SCOBY’s) of kombucha ready.
3. This will keep in the yeast and bacteria in check for healthy SCOBY living conditions
4. Add sugar directly to the hotel jar
5. Add leftover finished kombucha to the jar
6. Place all SCOBY’s and starter tea into a fresh batch of sweeten tea
