Take chicken out of the oven and remove the wire rack and add favorite vegetables to the pan. Stir veggies in the chicken fat and juices and add a little salt and pepper and/or your favorite spices.
Keep onions w/ onions, carrots w/ carrots, potatoes w/ potatoes, etc.. on the sheet pan because some veggies will cook faster than others (i.e. onions cook faster than carrots).
You may need to take the chicken thighs out of the oven one or two times and stir/rotate/ or remove the veggies because they will cook faster than the chicken.

• Potato chunks take ~ 20-30 minutes to cook depending on size
• Carrots chunks take ~ 20 minutes to cook under the chicken
• Onions medium slices take ~ 10-15 minutes to cook under the chicken

Ingredients:
• 8 chicken thighs ( ~ 2 lb) , bone in, skin on
• salt
• pinch black pepper
Instructions:
• Preheat oven to 450F. Line a baking sheet with aluminum foil.
• Take off any excess skin hanging off the thigh, if needed.
• Liberally salt the chicken and add a bit of black pepper. The salt will dehydrate the skin and make it crispy. You want to see the salt on the skin.
• Roast for ~ 45 minutes or until juices run clear and chicken temperature reaches 165F.
• Rest 5-10 minutes. Add hot sauce to taste. Happy, crispy eating!
