Fermented soya bean is popularly known as kinema in Sikkim, Akhuni in Nagaland and Turumbai in Meghalaya, is a must have kitchen ingredient in the Northeastern homes, It has a pungent aroma and is used as an ingredients in various dishes, and also as a main ingredients by itself. It is prepared from soya beans by various tribes in the Northeastern India. There are a whole lot different ways of making Akhuni chutney. This is one of the simplest and easiest way to make a dry version of the chutney.
