• 4 Cups Milk
• ½ Cup white sugar
• ½ cup small tapioca pearls
• 1 Egg, lightly beaten
• 1 tsp. vanilla essence
• 1/8 tsp. salt
One of the best things about this dish is that it’s amazing both warm and cold. This means if you do end up with any leftovers make sure you don’t throw them out as they’re amazing as a nice cold breakfast.
Try to use small tapioca pearls for the best results. You can use other varieties but the texture and taste may be a bit off.
You’re able to leave the egg out of the pudding but you will notice a difference in texture. You can also use coconut milk instead of just plain milk if you would like a coconut flavoured tapioca pudding.
To help speed up the cooking of this pudding (if that’s what you’re after) you will need to soak the tapioca pearls overnight. I recommend doing this with 1 cup of the milk and storing it in the fridge. Again, this may alter the result but it will still taste amazing.
I recommend stirring the pudding every 30 minutes to help improve the texture of it. If you’re using a slow cooker, then you may find it will start to burn on the bottom. Stirring every 30 minutes should help prevent it from burning.
