BRINJAL STUFFED WITH PEANUT MIXTURE
Brinjal- 500 gms slit cross until the stem
in a pan add
-coconut oil
-garlic cloves- 10
- Red chillies-3
- cinnamon - 1 inch
- coriander seeds- 1 tsp heap
- elaichi/cardamom-3
- white til/sesame - 1 tbsp
- jeera / cumin seeds - 1 tsp
- coconut scraped - 1/2 cup
- roasted pea ut - 3/4 cup
salt
roast them all
make coarse powder by adding lime juice fro. 1/2 lime
stuff in the brinjal slits
in a pan add oil for tadka/ seasoning
mustard- 1 tsp
onion- 1 chopped
garlic - 5 chopped
fry until raw smell goes
add cumin seeds - 1/2 tsp
Kashmiri chilli powder - 1/2 tsp
haldi powder - 1 /4 tsp
Salt
roast . Add the stuffed brinjal.
curry leaves - 4 sprig
The remaining powder after stuffing.
sprinkle water and keep roasting until it has cooked.
