Recipe for "Pesto Eggs"
Ingredients:
- butter - 1 tsp.
- baby spinach - 100 g
- salt - 1/4 tsp.

- basil pesto - 2 tsp.
- eggs - 2 pcs.

- olive oil - about 2 tsp.

Serving:
- fresh bread
- cayenne pepper
Preparation:
1. Prepare all of the ingredients by washing and drying the spinach and leaving the eggs at room temperature for a bit.
2. In a heated non-stick pan melt the butter. Add the spinach and salt and cook until the spinach is tender.
3. In the cooked spinach, form small wells in which you will put 1 tbsp. basil pesto.
Let it cook for about a minute.
4. Break an egg into each well and cook the eggs until the whites turn solid. Add 2 tbsp olive oil and pour the heated oil over the loose yolk. Leave the yolk a bit runny and the whites solid and cooked. Remove from the heat.
5. Serve immediately on a slice of fresh bread and sprinkle with some cayenne pepper.
