Mutton rogan josh
Ingredients quantity
Oil 3-4 tbsp
Bayleaf 1-2 nos
Cinnamon stick 1 nos
Cloves 2-3 nos
Green cardamom 4-5 nos
Black cardamom 1 nos
Mutton 700 gm
Onion 500gm
Salt to taste
Ginger garlic paste 2 tbsp
Water as required
Curd 3 tbsp
Red chilli powder 3 tsp
Fennel powder 1 tsp
Dry ginger powder ½ tsp
Garam masala 1 tsp
Shahi jeera a sprinkle
Brown onion for garnish
Coriander leaves for garnish
Method :
1. Heat a kadhai , add oil, bayleaf, cinnamon stick , cloves ,green cardamom , black cardamom allow it to splutter .
2. Now add onion and allow it to fry until golden brown .
3. Now add mutton , mix it well and give a stir for 5 mins continuously on high flame .
4. Now add salt ,ginger garlic paste and sauté it well for 2-3 mins .
5. Now add water , cover with lid and allow it to cook for 20-25 mins .
6. Meanwhile whisk the curd using fork , keep it aside .
7. In a bowl , add chilli powder , mutton stock and mix it well , add it into the kadhai .
8. Now add fennel powder , ginger powder and mix it well .
9. Now add the whisked curd and mix it well , allow it to cook for 10-15 mins .
10. Now add garam masala , mix it well .
11. Atlast add shahi jeera , give a stir .
12. Transfer it to serving bowl , garnish it with brown onion , coriander sprig .
13. Serve hot .
