Try this delicious, one-pan dish with roasted buttery, rich barramundi fillets and cherry tomatoes. This simple seafood dish is elegant, healthy, and simple to make for an incredible family dinner.
Roasted Barramundi with Cherry Tomatoes Recipe
Prep Time: 10 minutes
Cook Time: 30 minutes
Serves: 4
Ingredients:
1 1/2 lbs cherry tomatoes, halved & whole
3 medium shallots, thinly sliced
3 cloves of garlic, minced
3 tablespoons extra virgin olive oil
2 teaspoons balsamic vinegar
2 teaspoons honey
1/2 teaspoon dried thyme
Flaked salt & freshly cracked pepper, to taste
4 6 oz Omaha Steaks Barramundi Fillets, thawed
1 lemon, juice & zest
Fresh basil or parsley, to garnish
Directions:
1. Preheat the oven to 350°F degrees. To a large baking dish add the tomatoes, shallots & garlic.
2. In a small mixing bowl whisk together the olive oil, vinegar, honey, thyme, salt & pepper until well combined.
3. Pour mixture over the tomatoes & toss until well coated. Roast for 15 minutes as you prepare the fish.
4. Pat dry the filets with a paper towel. Drizzle with olive oil. Season with salt & pepper.
5. Transfer filets to the baking dish & roasted until cooked throughout, about 12 to 15 minutes.
6. Finish with freshly squeezed lemon juice & lemon zest. Garnish with basil & enjoy!
