Herrings are very popular in Poland at any time of year, and they are also served at Christmas Eve. The most popular preparations are classic herrings fillets ("matjes") in oil (the best ones are in healthy linen oil), or with cream, sour apples, chopped onions, usually served with the so-called root vegetable salad or potatoes.

Ingredients for our sour cream herrings recipe:
- 450g pickled herring fillets
- 60g mustard seeds
- 5 small white onions
- 350g sour cream
- 1 tablespoon fine sugar
- pinch of salt
- fresh parsley to top
- rye bread or cooked potatoes to serve
