•𝐂𝐮𝐫𝐫𝐲 𝐋𝐞𝐚𝐯𝐞𝐬 : 10-12 (optional)
•𝐏𝐨𝐡𝐚 (𝐅𝐥𝐚𝐭𝐭𝐞𝐧𝐞𝐝 𝐑𝐢𝐜𝐞) : 2cups

𝐌𝐞𝐭𝐡𝐨𝐝:
1. 𝐇𝐞𝐚𝐭 𝐨𝐢𝐥: In a kadhai or heavy-bottomed pan, heat oil over medium heat.
2. 𝐅𝐫𝐲 𝐩𝐞𝐚𝐧𝐮𝐭𝐬: Add peanuts and fry on medium heat until golden and crunchy. Remove and set aside.
3. 𝐒𝐚𝐮𝐭𝐞 𝐠𝐚𝐫𝐥𝐢𝐜: In the same oil, add the thinly sliced garlic. Saute on medium heat until it turns slightly golden.
4. 𝐀𝐝𝐝 𝐬𝐩𝐢𝐜𝐞𝐬: add dried red chilies and curry leaves. Saute for about a minute on medium heat until fragrant.
5. 𝐀𝐝𝐝 𝐩𝐨𝐡𝐚: Add 2cups of poha to the kadhai. Stir continuously, and let the poha cook until it turns crisp. This may take 5-7 minutes on medium heat.
6. 𝐌𝐢𝐱 𝐩𝐞𝐚𝐧𝐮𝐭𝐬: Once the poha is crispy, add the fried peanuts and sprinkle salt to taste. Mix everything thoroughly.
~Turn off the heat and serve your crispy, flavorful Chura Bhuja.
