Kisir (kısır) - this traditional bulgur salad is usually prepared for house guests in family or friends gatherings.
There are many variations of this dish available. It's safe to say that each family has their own secret ingredient for this recipe to surprise their loved ones with a wholesome pleasure for taste-buds.
Ingredients
3 cups Duru Fine Bulgur
2,5 cups Boiling Water
3 medium sized Onions
5 green Peppers
2 medium sized Tomatoes
2 medium sized Cucumbers
4-5 Fresh Onions
¼ Bunch Parsley
½ Cup Olive Oil
2 tsp. Pepper Paste
2 tsp. Tomato Paste
Black Pepper
Cumin
Red Pepper flakes
½ cup Lemon Juice
Dried Mint Flakes
Salt
1 Put bulgur in large bowl and pour boiling water over bulgur. Cover with a lid and let the water to be absorbed.
2 Finely chop all vegetables: peppers, tomatoes, cucumbers, parsley, onions and fresh onions.
3 Sautê onion in olive oil till golden. Add green peppers, tomato and pepper paste, black peppers, cumin and red pepper.
4 Stir 1 minute. Put that mixture over bulgur, mix well. Add lemon juice, all vegetables chopped, mint and salt.
