**Ingredients:**
- 2 1/4 cups (292 grams) bread flour
- 1 1/2 cups (195 grams) whole wheat flour
- 1 1/2 tablespoons (19 grams) sugar
- 2 1/4 teaspoons (1 packet) instant yeast
- 1 1/2 teaspoons kosher salt
- 1 1/2 cups (360 grams) warm water (105 to 110 degrees F)
- 3 tablespoons (38 grams) extra-virgin olive oil
- 4 ounces (113 grams) feta cheese, crumbled
- 1 teaspoon fresh thyme
- 1/2 teaspoon crushed red pepper flakes
- Zest of 1 lemon
- 6 deli slices mozzarella cheese
- 2 tablespoons (25 grams) extra-virgin olive oil
- 1 tablespoon (14 grams) unsalted butter
- 2 garlic cloves, finely chopped
- Pinch crushed red pepper flakes
- 2 tablespoons (15 grams) grated Parmesan
- Handful fresh flat-leaf Italian parsley, finely chopped
- Za’atar seasoning, for sprinkling
**Directions:**
1. In a large mixing bowl or in the bowl of a stand mixer fitted with a dough hook, whisk together the bread flour, whole wheat flour, sugar, yeast, and salt. Add the water and olive oil and mix until combined into a shaggy dough. Knead until smooth and slightly sticky, about 7 to 10 minutes. Add more flour if needed to prevent sticking.
2. Transfer the dough to an oiled bowl, cover with plastic wrap or a towel, and let rise at room temperature until doubled in size, about 1 to 2 hours.
3. Preheat your pellet grill to 500 degrees F. Line 2 rimmed baking sheets with parchment paper.
4. For the filling, combine the crumbled feta cheese, fresh thyme, crushed red pepper flakes, and lemon zest in a small bowl. Mash lightly with a fork and set aside.
5. Dust a clean work surface with flour. Divide the dough into 6 equal balls and roll each into a 7-inch circle. Place a slice of mozzarella and a tablespoon of the feta mixture on each circle. Seal the edges and flatten gently.
6. Place the stuffed pitas on the prepared baking sheets, cover loosely, and let rise for 30 minutes.
7. Cook the pitas on the pellet grill until puffy and lightly browned, about 6 minutes. Rotate the pans halfway through for even cooking.
8. For the optional garlic oil topping, heat the extra-virgin olive oil and butter in a small saucepan over medium-low heat. Add the garlic and red pepper flakes, and simmer for 2 minutes. Brush over the warm pitas and sprinkle with Parmesan, parsley, and za’atar seasoning.
9. Serve the pitas warm and enjoy the delicious flavors straight from your pellet grill!
