Spicy Chicken Chipotle Pasta
This is my all time favorite pasta that I always get at the @cheesecakefactory. This is my attempt of making it at home.
You guys have to try it, believe me you will be hooked. I couldn’t find chipotle pepper in adobo sauce so I used chipotle seasoning which is easily available in grocery stores.
This pasta is cheese, saucy, spicy.. hey you can’t go wrong with it.
Here is how I made it.

Chipotle Chicken

2 chicken Breast, cut into strips
2 tablespoons garlic powder
2 tablespoons chipotle seasoning
1 tablespoon crushed red pepper
Juice of a lime
1 tablespoon honey
1 tablespoon sambal olek or hot sauce
Oil
Mix all ingredients together except for oil and marinate for 30 minutes.
Heat oil on medium high.
Add chicken and cook until it is cooked through.

Chipotle Pasta

3 cups penne pasta, boiled
3 tablespoons oil
Dried parsley
1 medium onion, diced
1 cup frozen peas
12 sticks Asparagus, blanched
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 teaspoon garlic powder
1 tablespoon chipotle seasoning
1 tablespoon butter
1 tablespoon white flour
900 ml vegetable stock
1/2 cup chipotle dressing
1/2 cup half n half or heavy cream
1 cup grated Parmesan
1/2 cup shredded cheddar cheese ( I used both white and sharp)
Heat oil and sauté onions until lightly brown.
Add frozen peas, asparagus, red and yellow bell pepper.
Add garlic powder and chipotle seasoning and cook on high heat for a few minutes.
Add flour and butter.
Stir until the flour is no longer raw.
Gradually add vegetable stock to avoid lumps.
Add chipotle dressing and mix.
Add half and half and mix again.
Let it simmer on medium low heat for 10 minutes.
Add Parmesan and cheddar cheese.
Add pasta, chicken and 1/4 cup of tomato sauce.
Let it simmer until everything is well incorporated.
Sprinkle parsley and enjoy.
