Cheesecake playlist:
1 1/2 cups crushed plain vanilla cookies (like nilla wafers) or graham cracker crumbs
1/2 tsp cinnamon
1/2 cup butter, melted
2-8 oz packages of cream cheese at room temperature
3/4 cups icing sugar
3 tsp (I SAY 3 TBSP IN THE VIDEO, BUT IT IS 3 TSP) unsweetened unflavoured gelatin plus 3 tbsp water (one envelope of Knox gelatin)
1 cup whipping cream whipped or two cups of Cool Whip topping
1/2 cup kiwi puree (about 3 medium sized kiwi)
3-4 kiwis peeled and sliced for topping
3 tbsp (1/2 package) lime jello powder plus 1 cup hot water
Make the kiwi puree by peeling and dicing 2-3 medium sized kiwis, mash with a potato masher or food processor.
Combine graham cracker or cookie crumbs together with the cinnamon and butter. Press into the bottom of a springform pan and refrigerate for about an hour.
Sprinkle the unflavoured gelatin over the 3 tbsp of water in a small bowl. Allow to sit until water is absorbed. Place bowl in the microwave and cook on high for about 15 seconds until mixture is hot. Stir until gelatin is dissolved. Allow to cool slightly.
In a large mixing bowl combined the cream cheese and powdered sugar together until smooth.
Beat in cooled gelatin mixture.
Stir in kiwi puree.
Fold in the whipped cream or topping.
Spoon the cheesecake mixture over the crust and smooth out.
Chill for 2-3 hours.
While cheesecake is chilling, combine the 1/2 package jello powder with 1 cup hot water, stir until dissolved. Allow to cool to room temperature at least.
Arrange sliced kiwi over cheesecake and pour the cooled lime jello over the top.
Chill until set.
As I stated in the video, this may not actually happen completely. My kiwis were very ripe, not sure if that had anything to do with it.
Don't use the jello if you don't want to, this is a nice cheesecake without it.
