Bang Kuang Char is one of the easiest dish to cook yet most difficult to master. I have failed many times and finally succeed. Hope you enjoy my recipe.
1 medium size yam bean/bangkuang/jicama
1 small size carrot
A handful of dried shrimp (re-hydrated)
3 dried mushroom (re-hydrated) *keep the water
3 cloves garlic minced
A handful of thinly slice pork belly *optional
1 tbsp oyster sauce
salt and sugar to taste
water as much as needed
1-2 tbsp oil
1. Peel yam bean and carrot, shred it into sticks using mandolin or manually cut it using knifes
2. Minced garlic
3. Chop re-hydrated dried shrimp into small sizes
4. Slice re-hydrated dried shiitake mushroom
5. Thinly slice pork belly
6. Heat up pan with oil
7. Add in garlic, dried shrimp and mushroom
8. Saute for 1-2mins
9. Add in shredded yam bean and carrot
10. Season with oyster sauce, salt and sugar
11. Add in shiitake mushroom water
12. Add in water
13. Simmer till yam bean is soft
*Add water as per needed and adjust seasoning to taste
