Loaf Ingredients:
2 Cups All Purpose Flour (272g)
2 Teaspoons Baking Powder (10g)
1/2 Teaspoon Baking soda (2.5g)
1/4 Teaspoon salt (1.5g)
1/2 Cup Butter (112g)
5 Tablespoons yogurt (70g)
2/3 cup sugar (125g)
2 Eggs
1 Tablespoon Orange Zest (6g)
3/4 Cup orange juice+fruit blended (180ml)
1 Cup Fresh Cranberries (100g)
Glaze:
1 Cup Powdered Sugar (120g)
2 Tablespoons Water (30ml)
Directions:
1. In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside. In a large mixing bowl, beat the butter, sugar, and yogurt until light and fluffy. Add the eggs and mix just until combined. Whisk in the orange zest and juice. Add the flour mixture in two parts, mixing just until combined. Fold in the cranberries.
2. Prepare a 9 inch loaf pan with butter and flour or with cooking spray. Spoon batter into pan and smooth out top. Bake in a preheated oven at 350F for 40-45 minutes or until an inserted toothpick comes out clean. Cool completely on a wire rack.
3. To prepare the glaze, mix together the powdered sugar and water. Pour glaze over the loaf and let stand until glaze is set.
