We have eaten many a Zucchini bread, but this is by far our favorite recipe (provided by a friend in our previous town.) This recipe makes two full loaves or 16 mini loaves. Mini loaves make perfect gifts for Christmas or special events.
Ingredients
2 cups Zucchini
3 eggs
1 cup oil
2 cups sugar
1 Tablespoon baking powder
1 Tablespoon baking soda
2 Tablespoons Vanilla
(Optional)
8 Ounces chocolate chips
8 Ounces walnuts
