COCONUT COOKIES
Ingredients:
450g plain flour
1/2 Tsp baking powder
lemon juice of 1/2 lemon
250g chopped butter
180g sugar
120g shreded coconut
-Combine all the ingredients by hand
-when the dough gets soft and playable start making small balls
(around 35g )
Optional : you can roll your balls in shredded coconut
-place them on a tray and slightly flatten the top with your fingers
-bake cookies on 180c for 15 minutes
- cookies should only be light brown in colour and stil a bit soft
- for crunchy cookies bake a bit longer
