VASILOPITA RECIPE
Ingredients:
1 cup butter, softened + 1 Tbsp for greasing
2 cups granulated sugar + 2 Tbsp powdered sugar for sprinkling on top
3 cups flour
6 eggs
2 tsp baking powder
1 cup warm milk
1/2 tsp baking soda
1 Tbsp fresh lemon juice
1/4 cup slivered almonds, toasted
1 coin
*optional: 1 tsp almond extract
Instructions:
1. Preheat oven to 350 degrees and grease pan with 1 Tbsp butter. (I use a 10" Wilton pan)
2. In medium bowl, cream 1 cup butter and 2 cups sugar until light in color. Stir in flour and mix until coarse like breadcrumbs. Add eggs one at a time, blending each in well.
3. In small bowl, combine baking powder and milk. Add to batter and mix well.
4. Combine lemon juice and baking soda in small bowl. Add to batter and mix well. Wrap coin in foil.
5. Pour batter into greased pan and bake 15 minutes. Add coin and make the sign of the cross over the cake.
6. Sprinkle toasted almonds and bake additional 25-30 minutes or until cake springs to touch.
7. Cool on rack for 10 minutes, then invert onto cake plate. Dust with powdered sugar.
