This recipe for cherry clafoutis is one of the easiest French desserts, simply perfect and is absolutely amazing. A custard like base and lots of cherries on top, sprinkled with a bit of icing sugar, it is best served warm.
Ingredients for 6-8 servings
• 500 g fresh sweet cherries, stemmed and pitted
• 3 eggs
• 100 ml milk
• 100g flour
• pinch of salt
• 100 g sugar + a little for dusting
• 7g vanilla sugar
• 200ml - 35% double cream
• 20 g of butter to grease the baking dish
For serving
• icing sugar
Instructions:
1. Preheat the oven to 180C. Grease a round 24cm baking dish with butter. Sprinkle with about 2 tbsp of sugar.
2. Mix eggs with sugar and a pinch of salt. Stir in the flour. Add milk, cream, vanilla, and mix well until well blended. The result is similar to crepe mixture.
3. Pour the 1/4 mixture and bake for 7-10min at 180C
4. Arrange the cherries in a single layer over the crepe
5. Pour the rest mixture over the cherries
6. Bake for about 35-45 minutes until puffed and golden brown. Sprinkle with icing sugar before serving. Serve warm or chilled. Enjoy!
