HOW TO MAKE SIMPOL ADOBONG PUTI

Who doesn’t love adobo? Every Filipino grew up enjoying their own household’s version of adobo, while foreigners usually start with adobo as an introduction to Philippine cuisine. Here, try a version that skips the soy sauce but ends up just as (or even more) delicious than the classic. Don’t forget about the dipping sauce AND the extra, extra cups of steamed white rice. INGREDIENTS
1 kilo pork belly
1 teaspoon rock salt
1 head garlic, crushed
1 tablespoon crushed peppercorns
3 to 4 laurel leaves
3/4 cup Datu Puti Vinegar
1/4 cup Datu Puti Patis
1/4 cup oil
For the dipping sauce:
Datu Puti Vinegar
garlic
red chili
