This red velvet mug cake recipe can be made with non-dairy milk and is eggless and you can leave out the red food coloring if desired. There is a very small amount of vinegar in this red velvet mug cake, but you can not even taste it! This red velvet mug cake bakes for about 1 minute in the microwave and has a perfect texture. Red Velvet Mug Cake Ingredients:
4 tbsp all-purpose flour
2 tbsp granulated sugar
1 tsp milk chocolate cocoa powder
1/2 tsp Hershey's Special Dark cocoa powders
1/2 tsp baking powder
pinch of salt
3 tbsp milk (can be non-diary milk)
1 1/2 tbsp vegetable oil
1/2 tsp distilled white vinegar
1/4 tsp vanilla extract
small drop of red gel food coloring (I love the Americolor brand since a little goes a long way)
Microwave for 55-60 seconds depending on your microwave.
Mug Cake Cream Cheese Frosting Ingredients:
2 tbsp room temperature cream cheese (block cream cheese)
1 1/2 tbsp confectioner sugar
1 /2 tsp vanilla extract
Directions
1. In a microwave safe cup or bowl, add all-purpose flour, granulated sugar, baking powder, unsweetened cocoa powder, Hershey's Special Dark cocoa powder, and salt. Mix these ingredients thoroughly with a fork. Add milk, vegetable oil, vanilla extract, distilled white vinegar, and a drop or more of red gel food coloring. Mix all of the ingredients together with the fork making sure to get the bottom and sides of the cup fully stirred into the mixture. Feel free to add more red gel food coloring if the batter isn't red enough. Microwave for 55 - 60 seconds.
2. To make the cream cheese frosting, add room temperature cream cheese, half of the confectioners sugar, and the vanilla extract. Mix together with a fork until all of the powdered sugar is mixed in. Add the remaining confectioners sugar and mix until combined. Use a knife or a piping bag and top the red velvet mug cake with cream cheese frosting.
