To maximize the shelf life of shredded mozzarella cheese after opening, tightly seal original packaging or place the cheese in resealable plastic bags or airtight containers. Properly stored, an opened package of shredded mozzarella cheese will last for about 5 to 7 days in the refrigerator.
Never move frozen mozzarella directly from the freezer to the counter. Instead, move the frozen cheese to the refrigerator at least a day before you plan on using it. The fridge is warm enough to start the thawing process without damaging the texture or taste.
