CHUTTI MOONG DAL
CHEF AANAL KOTAK
INGREDIENTS:
• 1 tbsp oil
• ½ tsp mustard seeds
• ½ tsp cumin seeds
• ¼ tsp asafoetida (hing)
• 6-8 curry leaves
• 1 tbsp green chili, chopped
• 1 tbsp ginger, chopped
• 2 dry red chilies
• 1 cup yellow moong dal (soaked for at least 30 minutes)
• 1 tsp turmeric powder
• 1 tsp red chili powder
• 1 tsp coriander powder
• 1 tsp cumin powder
• Salt to taste
• Water as needed
• Fresh coriander leaves, chopped (for garnish)
INSTRUCTIONS:
• Heat oil in a pressure cooker over medium heat.
• Add mustard seeds, cumin seeds, and asafoetida. Allow the seeds to crackle.
• Add curry leaves, green chili, ginger, and dry red chilies. Sauté for about 1 minute, until fragrant.
• Drain the soaked yellow moong dal and add it to the cooker.
• Stir in turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well to coat the dal with the spices.
• Add enough water to cover the dal (about 2-3 cups).
• Close the pressure cooker and cook for 2-3 whistles (about 8-10 minutes).
• Turn off the heat and allow the pressure to release naturally.
• Open the cooker and give the dal a good stir. Adjust the consistency by adding more water if needed.
• Garnish with freshly chopped coriander leaves.
• Serve the Yellow Moong Dal hot with roti, paratha, or rice.
