Recipe:
Start with about half a cup of Avocado Oil, mixed with a tbsp of Garlic Powder, Smoked Paprika, Hatch Green Chili Powder (half tbsp), salt (to taste), and yuzu juice.
Get this marinade paste on your chicken thighs and let sit for as long as possible before air frying at 380 for about 18 minutes, flipping half way through. While you wait, get a few chipotle peppers in adobo finely diced and mix that with mayo, lime juice, salt, pepper, garlic powder, and smoked paprika for the sauce. Adjust seasoning as needed.
Then take a baking sheet and add your bacon of choice, cover it in a little oil and smokey habanero seasoning before baking it. Last step is to build your sandwich with a toasted brioche bun, the sauce, lettuce, tomatoes, the chicken, bacon, and then more sauce.
