Ikan Merah Masak Lemak Cili Padi / Red Snapper in Spicy Coconut Milk.
My easy home cooking recipe with simple ingredients.
Ingredients
400-500g fish
1 tbsp ginger garlic paste
2 tsp turmeric powder
1 tsp lemon juice
1 onion
3 shallots
1 red chili, 1 green chili and 5 bird's eye chilies (cili padi)
3 cloves of garlic
2 inch ginger
1 lemongrass
1 tsp fenugreek
1 cup of grated fresh coconut (blend with 1 cup of water) x 2 times
1 tomato
2 kaffir lime leaves
black pepper
some salt
cooking oil
Method
1. Blend / chop coarsely onion, shallots, garlic, ginger and chilies.
2. For coconut milk, use fresh coconut grated. (blend coconut with 1 cup of water (1st milk) and keep aside. Use the same coconut and add 1/2 - 1 cup of water and blend again to get 2nd milk). Keep separately 1st milk and 2nd milk.
3. Marinade fish with ginger garlic paste, 1 tsp turmeric powder, lemon juice, salt and pepper. Shallow fry after 30mins and keep aside.
4. Heat a pan with oil. Add fenugreek and stir for 20secs.
5. Add blended ingredients and lemongrass. Cook till oil separate.
6. Add tomato, 1 tsp turmeric powder and pour 2nd coconut milk (the light version). Mix well and cook till gravy thick slightly.
7. Add the fish, salt and cook for 1-2 mins. Low the heat and add the 1st milk and kaffir lime leaves. Stir well and let it boil. Off the flame when started to boil.
