The first snow has already fallen, and the atmosphere is shifting more and more towards Christmas. The days are getting cozier, filled with warm lights and holiday preparations. So it’s really time to say goodbye to the autumn season 🍂
But I just can’t do it without using the pumpkins I have left from the fall and Halloween season. So instead of throwing them away, I’ve decided to turn them into something delicious and prepare the last final autumn dinner with only pumpkin dishes. It’s the perfect way to celebrate the season one last time before embracing all things Christmas 🙌
So in this video I will prepare:
🎃 Pumpkin Hummus
This simple and flavorful starter is the perfect way to start any dinner. The pumpkin adds a seasonal twist to the classic hummus, creating a creamy and slightly sweet dish that pairs beautifully with fresh veggies, crackers, or bread. To make it, I’ll blend pumpkin puree with chickpeas, tahini, and spices until it’s smooth and delicious. It’s quick, easy, and guaranteed to bring cozy autumn vibes to the table.
🍪 Pumpkin Cheesecake Cookies
These cookies are a cozy combination of pumpkin flavors and a creamy cheesecake filling. They’re soft, sweet, and coated with cinnamon sugar, making them the perfect dessert for any day.
To get that creamy filling, I’ll mix cream cheese with sugar and use some trick - I freeze it, so it’s easy to wrap into the cookie dough!
The cookies are baked until golden, with a sugary crust that adds the perfect finishing touch. They’re really irresistible!
🍞 Pumpkin Bread with Chocolate Chips
This moist and rich bread is full of warm flavors from browned butter, pumpkin, and melted chocolate chips. It’s a comforting dessert or snack that’s great for cozy nights at home.
I’ll start by browning the butter for a nutty, caramelized flavor, then mix it with pumpkin puree and other ingredients to create a smooth batter.
Once the chocolate chips are folded in, the batter is poured into a loaf pan and baked to perfection.
The result? A beautifully golden loaf that’s sweet, tender, and packed with flavor!
🥤 Pumpkin Juice
Inspired by a little Harry Potter magic, this pumpkin juice is a refreshing drink that captures the essence of fall. Made with apple juice and pumpkin puree, it’s lightly spiced and chilled to perfection — perfect for any dinner table.
I’ll simmer the pumpkin and apple juice with spices like cinnamon and nutmeg, letting the flavors blend together on low heat. After straining it to remove any pulp, the juice is chilled and ready to serve. It’s a fun and unique addition to the table that everyone will love.
🍝 Pumpkin Carbonara
For the main course, I’m making a creamy and comforting pumpkin carbonara. The pumpkin puree blends perfectly into the sauce, creating a rich and velvety dish that’s both savory and satisfying.
To make it, I’ll cook pasta until al dente, fry crispy bacon, and prepare a sauce with pumpkin puree, egg yolks and cheese.
Once everything is mixed together, the pasta is coated in a luscious sauce that’s perfect for enjoying on a chilly evening. It’s a hearty dish that will leave you feeling warm and satisfied.
🕯️ Decoration for the Table
To create the perfect atmosphere, I’ll decorate the table with candles, decorative pumpkins, and other cozy touches.
I’ll carefully set out all the dishes, making sure each one looks as beautiful as it tastes. It’s all about creating a final autumn dinner that feels special and memorable, celebrating the season with warmth and charm.
