We can't stop thinking about Helena's rich and creamy pistachio and white chocolate version, generally dolloped with whipped cream and topped with chopped pistachios – perfect for keeping cosy in the chillier weather.

Pistachio and white chocolate hot chocolate

Serves 1-2
EASY
100ml whole milk
175ml double cream
90g best quality white chocolate, chopped
2 tbsp pistachio spread (plus a drizzle for serving)
A splash of vanilla extract
pistachios, roughly chopped, to serve
1 Put the milk, 100ml of the cream, white chocolate, pistachio spread and vanilla extract in a medium saucepan. Sprinkle in a small pinch of salt, then put on low heat.
2 Whisk gently until melted and steaming, you can use a milk frother, if you have one, to aerate it.
3 Pour into a warmed mug, whip the remaining cream to soft peaks, then dollop on top and top with a drizzle of pistachio cream and a sprinkle of chopped pistachios.
