Ingredients for Mix Veg Hyderabadi:
Vegetables & Paneer:
- Green Beans, sliced- 120 gms (1.5 cups)
- Carrots, thick slices- 100 gms (1 cup)
- Cauliflower, small florets- 75 gms (1 cup)
- Fresh or frozen green peas- 75 gms (3/4 cup)
- Capsicum (Green Pepper), cubed- 75 gms
- Paneer, small cubes- 50 gms
For Masala Paste:
- Onion, thick sliced- 1 medium (75 gms)
- Ginger, chopped- 1” piece (8 gms)
- Garlic cloves- 6-7 cloves (8 gms)
- Green Chillies- 3 (cut into pieces)
- Cashew nuts- 8
- Tomato, quarters or cubed- 2 small (100 gms)
- Spinach leaves (Palak), whole if small or rough chopped- 1 cup (50 gms)
- Coriander Leaves (roughly chopped) - 20 gms
- Salt- 1/4 tsp
Whole Spices for flavoring the oil :
- Green Cardamom- 4
- Cinnamon- 2 small
- Cloves- 3
- Black Cardamom- 2
- Bay Leaf- 2
Spice Powders:
- Turmeric Powder- 1/2 tsp
- Red Chilli Powder- 1 tsp
- Coriander Powder- 1 tsp
- Cumin Powder- 1/2 tsp
- Garam Masala Powder- 1/2 tsp
- Kasuri Methi ( Fenugreek leaves) dry roasted & crushed- 2 tsp
Other Ingredients:
- Fresh Cream (Malai)- 4 tbsp
- Refined Oil- 4 tbsp
- Ghee- 1 tbsp
- Salt- 1 tsp
Preparation:
- Cut one medium onion into thick slices, peel & chop ginger & garlic.
- Also cut the green chillies and roughly chop the spinach (if small can keep them whole) & coriander leaves.
- Cut all the vegetables into slices/florets and the paneer into small cubes.
To make the Masala Paste:
- Heat 1 tbsp oil in a pan and add the thick sliced onions. Fry on medium heat for 2 mins and then add the chopped ginger, garlic cloves, cut green chillies and cashew nuts.
- Give a mix and fry on medium heat for 2-3 mins till the onions are soft.
- Now add the quartered or cubed tomatoes, salt and fry on medium heat for 2 mins till tomatoes are soft.
- Now add the spinach leaves, mix and fry on medium heat for 1 min till soft.
- Switch off heat and add the chopped coriander leaves. Give a mix and remove onto a plate to cool.
- Now grind it into a smooth paste in a blender and set aside.
Process:
- Heat oil and ghee in a pan and add the whole spices. Stir and fry for 1 min to flavor the oil and then remove.
- Now add the sliced green beans and carrots and green peas (In case you’re using frozen green peas, do not add it now. Add it later along with the green capsicum/pepper instead).
- Sauté on medium heat for 1 minute .
- Now add the cauliflower florets. Give a mix and add 1/2 tsp salt and turmeric powder. Mix and continue to sauté on medium heat for 3 mins.
- Lastly add the cubed capsicum/green pepper and paneer cubes, give a mix and fry on medium heat for another 2-3 mins.
- Now add the masala paste and give a mix for 1 minute.
- Add the red chilli, coriander, cumin powders and 1/2 tsp salt, give a mix and cook on low heat for 3-4 mins till the paste & spices are cooked and oil separates.
- Now add 250 ml water, give a mix and cover & cook on low heat for 10 mins.
- Remove lid, add Garam masala powder, fresh cream and crushed Kasuri Methi.
- Mix and simmer for 2 mins on low heat till oil separates.
- Serve with roti or naan.
