Maximum weight loss with a creamy white bean and kale soup that is not only delicious but high in fiber. March is colon cancer awareness month. Creamy White Bean and Kale Soup
Ingredients
2-15 ounce white beans, cannellini beans, or northern beans, rinsed & drained
1 onion chopped
2 carrots chopped
2 stalks of celery chopped
2 small to medium potatoes peeled and chopped up small
3-4 cloves minced garlic
2 bay leaves
1 tsp salt
1/2 tsp ground sage
1/2 tsp ground rosemary
1/2 tsp onion powder
red pepper flakes(optional)
3 cups veggie broth
2 cups finely chopped kale
Instructions
Set instant pot to saute function and add some broth. add onions, celery and carrots and cook for 5-6 minutes
Next add garlic and red pepper flakes and cook for 30 to 60 seconds.
Next add some veggie broth to deglaze pot making sure to stir up all the bits on the bottom (great flavor there) Add spices
turn saute function off
add beans potatoes and rest of broth making sure everything is covered.
Set instant pot on manual for 7 minutes and make sure it is on seal. Let steam release naturally for about 10 minutes then go ahead and quick release. Remove lid and carefully take out 2 to 3 cups into a blender or use immersion blender and blend till smooth then add back into the rest of the soup. Stir in kale and put lid back on and let wilt for 3-5 minutes.
If you don't have an instant pot you can make this on your stove top
