Here's a perfectly quick and tasty dish that’s ready in just about the time it takes to cook the pasta!
Ingredients (serves 4):
320g Barilla Fusilli
190g Barilla Vegan Pesto
2 tbsp extra virgin olive oil
200g fine asparagus spears, cut into 5cm long pieces
2 mixed peppers, finely sliced
2 tbsp basil leaves
Method:
1. Bring a pot of salted water to a boil and cook the fusilli according to package instructions.
2. Meanwhile, heat a skillet until hot, add the extra virgin olive oil, asparagus and peppers and sauté for 3-4 minutes until brown and tender.
3. Toss the cooked fusilli with the vegetables and the pesto. Toss until the pasta is coated in the sauce.
4. Serve topped with basil!
