In this video I show you how to make your own Sausage Meat which you can use far a variety things, including Sausage Rolls, Forcemeat Stuffing, Pigs in Blankets, etc. You can also change the flavour by using my various seasoning recipes too.
Sausage Meat Recipe
1 kilo Pork Belly pork is best ( or 70% lean pork & 30% Fat pork)
135g fine breadcrumbs or rusk
36g seasoning (use 36g of any of the seasoning recipe I’ve given to each Kilo of meat)
300g Ice COLD Water

Please Note: These recipes make MORE than required for the above recipe, use ONLY 36g of seasoning for each kilo of pork.
Yorkshire Pride seasoning
45g Fine Salt
9g White Pepper
6g Nutmeg powdered
6g Mace powdered
If you don’t have any Mace use an extra 4g of Nutmeg
6g ground coriander
6g dried parsley
Lincolnshire Sausage seasoning
45g Fine Salt
9g White Pepper
12g Fresh Sage finely chopped or 12g Dried ribbed sage
6g Nutmeg
Cumberland Sausage seasoning
45g Fine Salt
14g Black Pepper
2g Nutmeg
2g Cayenne
