Welcome to the Adult Pantry, this is a lifestyle channel for those in the hunt for a Good Life. This week I am going to address the issue with overripe bananas. I don’t know about you but, I find them yucky, and I cannot bear to eat them. It’s a struggle darling aspiring adults, the browner they get the more guilty I feel. The Brown banana peels scream at me that I am an impostor, who only bought them to make my kitchen look healthy & fresh, and that I greatly overestimated my capacity for clean eating, and I hear my grandmother's voice ringing in my head about not wasting food. If you are like me, and can’t eat overripe bananas, and don’t have the time to bake banana bread: this is the perfect recipe to turn those disgusting brown bananas into a delicious treat:
The super simple and might I add fairly healthy oat banana pancake: it’s even naturally gluten free.
You will need a blender or a food processor for this.
The ratio is super simple:
For 1 person you will need
1 banana
1 dl of oatmeal
1 egg
1 dl of milk
A pinch of baking powder if you like fluffy pancakes
A pinch of Cinnamon and Cardamon (optional, but I love it)
Mix it all in a blender and let it rest for 10 minutes, And you are ready to make the pancakes.
I eat it with a dollop of Greek yogurt and fresh pears with a sprinkle of Cardamon, and it's the yummiest breakfast possible, and the best part is I didn’t throw away those ugly bananas. I can feel my grandmother being proud.
