Recipe for the day, Baked Cassava Cake / Bingka Ubi Kayu.
Its sweet, dainty and definitely delicious
Ingredients
550g cassava, after grated
150g castor sugar
20g custard flour
50g butter, melted
2 bsp tapioca flour
170ml thick coconut milk
2 pinches of salt
Method
Peel the cassava and wash. Use grater to grate. Squeeze out the water from cassava. (Do not squeeze till dry). Mix cassava with castor sugar, castor flour, butter, tapioca flour, salt and coconut milk. Prepare baking tray. Grease with butter / oil. Transfer the mixture to tray. Spread it well. Cover the tray using foil. Bake using preheated oven at 180C - 200C for 45-50mins or till baked, using both up and down heat. (The baking time will be different for some). After 50min, remove the foil and bake using upper heat only for another 15-20mins or till the surface turn into golden colour.
