Chinese Okra & Egg Stir Fry (Asian Style Vegetarian Recipe)
Welcome to my Asian kitchen. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and learn new Chinese recipes.
Ingredients:
150g Okra
2 Eggs
1 Red Chilli Pepper
Salt to Taste
Method:
1. Place the okra in a bowl, add 1 litre of boiling water and leave for a minute then drain
2. Meranwhile, break the eggs into a bowl, beat till the yolk and white parts are well mixed
3. Thinly slice the chilli pepper
4. Cut the okra into bite size chunks
5. Heat half a Tbsp oil in a wok, pour the egg into the wok, stir fry until sets, remove from wok
6. Heat another 1 Tbsp oil in the same wok
7. Add the okra and chilli pepper, fry for half a minute
8. Add the egg, salt to taste and stir
9. Transfer onto a dish and serve
